I came across it months ago when it was only in PDF form as I was looking for ways to incorporate more vegetables into my family's meals.

For so many of us, veggies are something we HAVE to eat for our health instead of something we want to because they are delicious. I can personally attest that Leanne transformed my worldview on the humble zucchini: This cookbook is truly a book of inspirations and ideas, not hard and fast prescribed recipes. I have yet to find a recipe in here that my family, including my 2 year old, doesn't like try the Corn Soup on your little ones It's a hit in my house! To make it all even better, this cookbook is dedicated to the low-income community and helping those with limited income learn to cook healthfully - and more importantly- enjoyably, without being preachy or condescending.

I'm a college student and received this book as a gift from my mother. As someone who was new to cooking on my own, this book completely changed the way I thought about cooking. Not only does this book provide easy, no fuss recipes, it is basically a how-to book on how to cook and eat well. Leanne showed me that you don't need complicated ingredients to have an amazing meal.

And now that I'm a more experienced cook, I still come back to this book for inspiration and ideas on new recipes. If you are new to cooking, buy it. If you are on a tight budget, buy it or look at the PDF online. If you are looking for ways to cut back on processed foods, buy it. Even if you are an experienced cook, buy it. By the way, some personal favorites of mine are the zucchini chocolate muffins, banana pancakes, taco salad, cauliflower cheese, and her pizza dough recipe.

If I could give this book 10 stars I would.
